This fusilli with sautéed zucchini and a sweet pepper sauce makes for the perfect first course. The sauce – made using red peppers – is so creamy, velvety and subtly sweet, that it makes the perfect flavour companion to the sautéed zucchini.
The magic happens by sautéing shallots and garlic to give the sauce a robust, slightly sweet base. Then, add some sliced red peppers and cook for a few minutes until soft, but still retaining a slight crunch. This will give your sauce that gorgeous orange hue and creamy texture.
